Plums are almost done for the season so why not make a yummy teacake!
Plum Teacake
- 130g unsalted butter, chopped
- 200g(1 cup) brown sugar
- 2 eggs, lightly beaten
- 185g(1 1/2 cups) all purpose flour, sifted
- 2tsp baking powder
- 185g(3/4 cup) Greek yoghurt
- 400g(2 cups) plums, pitted and sliced
- confectioner’s sugar for dusting
- Preheat oven to 180°C (350°F). Grease a deep round or rectangle tin and line the base with baking paper.
- Beat the butter and sugar until light and creamy.
- Gradually add the egg, beating well after each addition until combined.
- Fold in the flour, then the yoghurt and stir until smooth.
- Spoon half of the mixture into the tin and smooth out.
- Arrange the plums evenly over the mixture and top with the rest.
- Bake for an hour or until a skewer comes out clean when inserted into the middle of the cake.
- Dust with confectioner’s sugar after taking out of the oven and/or before serving.
