Watermelon. Is there anything better than ice cold watermelon on a hot summer’s day? Why, yes! Watermelon Sorbet! As always super easy to make, although you do have to wait a while for it to freeze (I know, bummer…)
Watermelon Sorbet
Ingredients
(makes a whole lot! or about a gallon)
- 1/2 mini watermelon or 1/4 big one
- 1 cup sugar
- 1 cup boiling water
- juice from 1 lime
- Cut the watermelon into chunks and place in a blender.
- Mix the boiling water and sugar. Stir to dissolve the sugar and set aside.
- Blend the watermelon until you get a nice uniform juice like texture.
- Empty watermelon juice into a large bowl through a sieve so you catch any little seed pieces.
- Stir in the syrup and lime juice.
- Fill up your containers and freeze for 2-3 hours.
- Mash up with a fork to break up the ice crystals.
- Repeat steps 6 & 7 one more time.
