If you’re on a budget (like me) but love the taste of finer things, well, maybe this recipe is for you! Surimi is a product made to imitate crab meat and it comes pretty close! Here in Greece you can find it in frozen bars, but if you’re in the US you can get it in chunks and bars. Off course you can definitely use real crab meat if you can afford it! So, here we go:
Surimi Cakes
makes 3 large paties
Ingredients:
- 1/2 cup breadcrumbs
- 8 Surimi bars or about 1 cup chunks
- 1 Egg
- 1 Tbsp mustard
- 1 Tbsp Coconut oil (or other mild flavored oil) plus a bit more if you want to fry
- Salt & Pepper
- Pulse Surimi in food processor until flaky.
- Combine everything in a bowl, mix well.
- Wet your hands and form into 3 large paties or 6-8 small cakes.
- Pop in the fridge for a minimum of 30mins.
- Fry in a bit of oil or grill until golden brown. Since the only raw ingredient is the egg, you don’t need to cook for too long.
