

Sugar Free Jam
Ingredients
yield 4-6 cups
- 6 cups fruit
- 1 1/2 cup stevia (or to taste)
- 3 leaves clear gelatin (aprox. half an envelope powder gelatine)
- Peel the fruit if needed and add to a saucepan with the stevia.
- Bring to the boil and cook for 10-15 minutes. You don’t need to cook until the jam thickens as it won’t, since there’s no sugar.
- Soak the gelatin in some cold water for 5-7 minutes or dissolve according to package instructions if using powder.
- Add the gelatin to the jam and stir well to dissolve.
- Pour into clean jars, let cool and refrigerate.


After trying both cranberry and grapefruit, I don’t think I’ll be making the grapefruit jam again since it’s just too bitter. The cranberry came out sour but delicious!
