Spinach Risotto

serves 2

Ingredients

  • 1/4 pound or 500gr spinach
  • 3/4 cup rice
  • 2 cups chicken or vegetable stock
  • 2 spring onions, chopped
  • 2 Tbsp dill, chopped
  • 2 Tbsp parsley, chopped
  • 1 tsp fennel seeds
  • 3 Tbsp olive oil
  • Salt & Pepper

  1. Heat the oil in a pot and stir fry the onions, herbs, salt and pepper.
  2. Add the spinach and keep stir frying until wilted.
  3. Add the stock and rice, stir well, cover and simmer for 10-15 minutes or until rice is done.
  4. Serve with a splash of lemon and some feta cheese!
