Another Greek mom classic! Really easy and quick to make too!
Spinach Risotto
serves 2
Ingredients
- 1/4 pound or 500gr spinach
- 3/4 cup rice
- 2 cups chicken or vegetable stock
- 2 spring onions, chopped
- 2 Tbsp dill, chopped
- 2 Tbsp parsley, chopped
- 1 tsp fennel seeds
- 3 Tbsp olive oil
- Salt & Pepper
- Heat the oil in a pot and stir fry the onions, herbs, salt and pepper.
- Add the spinach and keep stir frying until wilted.
- Add the stock and rice, stir well, cover and simmer for 10-15 minutes or until rice is done.
- Serve with a splash of lemon and some feta cheese!
