This soup is perfect the next time you’re craving something quick and spicy.
Spicy Asian Inspired Soup
Ingredients

- 2 cups broth (chicken or vegetable)
- 2 cups water
- 1 spring onion, chopped
- 1 tsp red curry paste
- 2 Tbsp coconut oil (or other light flavored oil)
- 1 tsp garlic powder
- 1 Tbsp tomato paste
- 4 surimi sticks
- 4 shrimps (shelled and de-veined)
- 1/4 orzo (or other small cut pasta)
- 1/4 cup peas
- 1/4 cup chopped cabbage
- Heat the oil on high heat in a medium saucepan. Stir fry the curry paste for a couple minutes.
- Add spices, onion and tomato paste and stir fry for a couple more minutes.
- Add peas and cabbage. Stir fry until the cabbage softens a bit.
- Add broth and water. Bring to the boil then reduce heat to medium-low.
- Add the pasta and simmer for 10-15 minutes.
- Add the shrimp and surimi, turn off the heat and let sit, covered for 10 minutes
