 Spicy Asian Inspired Soup

Ingredients
serves 2

  • 2 cups broth (chicken or vegetable)
  • 2 cups water
  • 1 spring onion, chopped
  • 1 tsp red curry paste
  • 2 Tbsp coconut oil (or other light flavored oil)
  • 1 tsp garlic powder
  • 1 Tbsp tomato paste
  • 4 surimi sticks
  • 4 shrimps (shelled and de-veined)
  • 1/4 orzo (or other small cut pasta)
  • 1/4 cup peas
  • 1/4 cup chopped cabbage
  1. Heat the oil on high heat in a medium saucepan. Stir fry the curry paste for a couple minutes.
  2. Add spices, onion and tomato paste and stir fry for a couple more minutes.
  3. Add peas and cabbage. Stir fry until the cabbage softens a bit.
  4. Add broth and water. Bring to the boil then reduce heat to medium-low.
  5. Add the pasta and simmer for 10-15 minutes.
  6. Add the shrimp and surimi, turn off the heat and let sit, covered for 10 minutes
