Another delicious seafood dish this week!
Shrimp Orzo
serves 2
- 1 cup uncooked, shelled and deveined shrimp
- 1 cup orzo pasta
- 1 cup chopped tomatoes
- 1 cup chicken/vegetable/fish stock OR water
- 1 Tbsp tomato paste
- 2 Tbsp dill, chopped
- 2 Tbsp olive oil
- Salt & Pepper
- Bring the stock/water to a boil in a saucepan.
- Add shrimp and cook for 3-5 minutes, until shrimp turns orange.
- Remove shrimp and drain stock through a fine sieve. Set aside.
- Heat oil in the same saucepan.
- Add tomato paste and cook for 1-2 minutes.
- Add tomatoes and the stock. Bring to a boil.
- Add the orzo and cook according to package instructions or 13-15 minutes.
- Remove from heat and add the shrimp and dill. Season to taste. Stir.
- Enjoy!
