Being on the body ecology diet means no gluten and therefore no bread or any bread like foods…That’s why I’m obsessed with this cracker recipe! It’s completely gluten free and delicious!

Quinoa crackers

adapted from a recipe found on food.com

Ingredients

makes about 20 crackers

  • 1 cup ground linseed(flax)
  • 2/3 cup water
  • cup quinoa, ground into flour
  • 1/2 teaspoon sea salt
  • tablespoon olive oil 
  • 1/4 tsp oregano (optional)
  • 1/4 tsp ground black pepper (optional)
  • 1/4 tsp turmeric (optional)

 

  1. Soak flax seeds in water for 15 minutes.
  2. Grind up the quinoa into flour consistency (I use my coffee grinder).
  3. Mix ground quinoa with soaked flax seeds (do not strain)
  4. Add olive oil, sea salt, and spices.
  5. Grease a 9×11 cookie sheet then spread the mixture out. Spread it so it fills the entire sheet. Score.
  6. Bake at 180 degrees until it starts to brown on the edges (about 20 minutes), flip, turn oven off and bake a few more minutes.
