Oyster mushrooms are a great alternative to meat and taste really delicious in this risotto!
Oyster Mushroom Risotto/Wheatotto
Ingredients

- 1 1/2 cup cracked wheat
- 3 cups water
- 1 cup chicken/fish/vegetable stock
- 2 cups chopped oyster mushrooms
- 2 Tbsp sesame seeds
- 2 Tbsp rice vinegar
- 2 Tbsp coconut oil
- 2 Tbsp chopped dill or parsley
- 1 Tbsp pine nuts
- Heat the oil in a large skillet over medium/high heat. Add the pine nuts and sesame seeds. Toast for a couple minutes.
- Add the mushrooms and stir fry for 3-5 minutes, until fragrant and soft. Add the rice vinegar and turn the heat down to low.
- Stir in the wheat, water and chicken stock. Cover and simmer for 15 minutes or until all liquid is absorbed.
