Oyster mushrooms are a great alternative to meat and taste really delicious in this risotto!

Oyster Mushroom Risotto/Wheatotto

Ingredients

serves 2

  • 1 1/2 cup cracked wheat
  • 3 cups water
  • 1 cup chicken/fish/vegetable stock
  • 2 cups chopped oyster mushrooms
  • 2 Tbsp sesame seeds
  • 2 Tbsp rice vinegar
  • 2 Tbsp coconut oil
  • 2 Tbsp chopped dill or parsley
  • 1 Tbsp pine nuts
  1. Heat the oil in a large skillet over medium/high heat. Add the pine nuts and sesame seeds. Toast for a couple minutes.
  2. Add the mushrooms and stir fry for 3-5 minutes, until fragrant and soft. Add the rice vinegar and turn the heat down to low.
  3. Stir in the wheat, water and chicken stock. Cover and simmer for 15 minutes or until all liquid is absorbed.
  4. Enjoy!
