This pie is (big surprise) easy to make and delicious!
Take advantage of the mushroom abundance flooding farmers markets and make this tonight! A mixture of mushrooms is the best way to go but if you can only find one kind it’ll still taste great. Also if you use cheese, any that melts will do!
Mushroom pie
serves 6
Ingredients
- 5 cups mushrooms, chopped
- 2 Tbsp olive oil
- 1 Tbsp dried rosemary
- 1 Cup grated cheese(optional)
- Frozen puff pastry
- Coarse Sea Salt
- Pepper
- Put pastry in the fridge to thaw overnight.
- Preheat oven to 180 degrees.
- In a large skillet, heat the olive oil.
- Add mushrooms and rosemary
- Stir fry on high heat for 3-4 minutes or until mushrooms are soft and rosemary is fragrant.
- Lightly oil a medium oven dish.
- Place pastry in the dish.
- Add mushroom filling and sprinkle with cheese.
- Wrap pastry around filling (don’t worry about making it super nice).
- Sprinkle with some sea salt.
- Bake for 30 minutes or until golden.
