Here’s a recipe for mille feuille I’ve been making since I was a teenager. It’s always a hit and it’s not so hard to make either!
Mille feuille
Ingredients
- 20 cream crackers (or two 140gr packs)
- 3/4 cup/200gr butter
- 4 cups/1ltr fresh milk or 2 cups/500ml evaporated milk diluted in 2cups/500ml water
- 2 eggs
- 6Tbsp corn flour or vanilla pudding mix
- 1cup/250gr sugar
- whipping cream
- Beat 500ml of the milk with the eggs and corn flour/pudding mix.
- Melt the butter in a saucepan and add the sugar and the rest of the milk.
- Heat up and whisk until thick, set aside.
- Whip the whipping cream until stiff peaks form. Refrigerate.
- When the cooked cream has cooled, in a 13 x 9 x 2 in rectangle pan, line the bottom with a row of crackers.
- Add 1/3 of the cooked cream then another layer of crackers, followed by another layer of cream, then crackers again and the last layer of cream.
- Add the whipped cream on top as the final layer.
- You should have a few crackers left over. Crumble them up on top of the dessert and you could also grate some dark chocolate too if you like!
- It’s best if you chill the dessert for a while before eating so everything sets up nicely.
