Lettuce tacos

Ingredients

serves 2-3

  • 1 head romaine or iceberg lettuce
  • 500gr / 1 pound vegan ground meat (like beyond meat)
  • 1 cup shredded carrot
  • 1 cup shredded cabbage
  • 2 Tbsp olive oil
  • 1/4 cup water or stock
  • 1 onion, chopped
  • 1/4 tsp celery salt
  • 1/2 tsp sea salt
  • 1/2 tsp cumin
  • 1/2 tsp ground coriander seeds
  • 1/2 tsp paprika
  • 1/4 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  1. In a large saucepan, heat the oil on high heat. Add the meat and brown until no longer pink.
  2. Add the spices and stir fry for a couple minutes until fragrant.
  3. Add the water or stock and cook for 5-10 minutes until the meat is cooked and the liquid is evaporated.
  4. To serve create a taco bar with all the remaining ingredients and the meat. Add hot sauce for an extra spice kick!
