Lettuce tacos
Ingredients
serves 2-3
- 1 head romaine or iceberg lettuce
- 500gr / 1 pound vegan ground meat (like beyond meat)
- 1 cup shredded carrot
- 1 cup shredded cabbage
- 2 Tbsp olive oil
- 1/4 cup water or stock
- 1 onion, chopped
- 1/4 tsp celery salt
- 1/2 tsp sea salt
- 1/2 tsp cumin
- 1/2 tsp ground coriander seeds
- 1/2 tsp paprika
- 1/4 tsp ground black pepper
- 1/4 tsp cayenne pepper
- In a large saucepan, heat the oil on high heat. Add the meat and brown until no longer pink.
- Add the spices and stir fry for a couple minutes until fragrant.
- Add the water or stock and cook for 5-10 minutes until the meat is cooked and the liquid is evaporated.
- To serve create a taco bar with all the remaining ingredients and the meat. Add hot sauce for an extra spice kick!
