Humus

Ingredients

yields 3 cups

  • 1 cup chickpeas
  • 1/4 cup olive oil
  • 1/4 water
  • 1 Tbsp tahini
  • 2 Tbsp lemon juice
  • 1 tsp paprika
  • salt & pepper to taste
  1. Soak the chickpeas overnight.
  2. Add to a pan with water covering them and boil for 20 minutes.
  3. Drain and rinse. Add to a blender or food processor bowl with the rest of the ingredients. If the mixture is too thick add a bit more water, you want a creamy consistency.
  4. Serve with a drizzle of olive oil and some more paprika on the top.
