Gluten/Sugar free Spice Cake
Ingredients
- 1 cup buckwheat flour
- 1/2 cup linseed, ground
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 cup almonds, ground
- 3 eggs
- 1/4 cup butter, softened
- 3 Tbsp coconut oil
- 1/2 cup stevia
- 1 cup steamed butternut squash
- Preheat oven to 180°C.
- Beat eggs with the linseed and set aside for at least 10 minutes.
- Combine and mix together the dry ingredients.
- Add butter, stevia and coconut oil to the egg mixture and beat with electric mixer until combined.
- Slowly beat in the dry ingredients, alternating with the squash.
- Oil a pyrex or cake pan.
- Spread cake mix in the pan and bake for 30 minutes or until a toothpick comes out clean when inserted in the middle and the cake is cooked and springy.
