It’s Easter week here in Greece and for many that means fasting till Easter Sunday. So no meat or dairy and if you’re really hardcore no oil. So in that spirit this recipe is a staple for any fasting Greek table. It’s actually really tasty in it’s simplicity and like you’ve probably guessed by now, it’s super easy and quick to make!

Fava

Ingredients

  • 1 cup fava beans
  • 2-3 Tbsp olive oil
  • one small onion, chopped (optional)
  • salt & pepper
  1. Boil fava beans for 20 minutes or until the outside layer comes off the beans.
  2. Run through food processor until you get a choppy, textured mash.
  3. Empty in a plate, make a well in the middle, add olive oil, salt & pepper and serve with salad for a light and healthy lunch.

Optional: Add chopped onion on top if you like.

Stir before digging in!
