Coconut milk panna cotta
Ingredients
serves 4
- 500ml coconut milk
- 4 tsp Stevia
- 1 tsp vanilla extract
- 5 gelatin leaves
- Add the gelatin leaves to some cold water and let them soak for 5-7 minutes.
- Warm the milk, stevia and vanilla in a saucepan until hot but not boiling.
- Remove from heat, strain the gelatin and whisk into the milk.
- Divide into bowls and put in the freezer for 10-15 minutes until set.
- Serve with some dried, soaked or fresh blackcurrants for a delicious breakfast!
If you can only get gelatin powder then check on the package to see how much you need to use to set 500ml of liquid and substitute accordingly.
If you experience separating of the coconut milk then try whisking over an ice bath until the panna cotta sets.
