This carrot soup recipe is easy to make and very low in fat. If you opt for the vegetable stock it’s a great vegetarian dish too!
Carrot Soup
Ingredients

- 1 medium potato, cut into large chunks
- 5 carrots, cut into large chunks
- 2 cups chicken or vegetable stock
- 2 cups water
- 1 tsp salt
- 1 Tbsp vinegar
- 1/4 tsp turmeric
- 1/4 tsp black pepper
- 1/4 tsp curry powder
- Add all ingredients in a large pot.
- Bring to boil. Reduce heat to medium/low and simmer for 20-25 minutes or until vegetables are cooked.
- Puree in a blender or with a hand mixer.
