This carrot soup recipe is easy to make and very low in fat. If you opt for the vegetable stock it’s a great vegetarian dish too!

Carrot Soup

Ingredients
serves 2

  • 1 medium potato, cut into large chunks
  • 5 carrots, cut into large chunks
  • 2 cups chicken or vegetable stock
  • 2 cups water
  • 1 tsp salt
  • 1 Tbsp vinegar
  • 1/4 tsp turmeric
  • 1/4 tsp black pepper
  • 1/4 tsp curry powder
  1. Add all ingredients in a large pot.
  2. Bring to boil. Reduce heat to medium/low and simmer for 20-25 minutes or until vegetables are cooked.
  3. Puree in a blender or with a hand mixer.
