Baked Bean Casserole
Ingredients
serves 4
- 1 cup beans
- 2 spring onions, chopped
- 1 Tbsp tomato paste
- 3 small carrots, sliced
- 3 Tbsp chopped dill
- 3-4 Tbsp olive oil
- 1/2 cup water
- 1/4 tsp turmeric
- salt & pepper
- Soak beans in water overnight.
- Boil for 30 minutes, in a medium saucepan, just covered with water.
- Preheat the oven to 180°C/350°F.
- Drain beans, add to an oven dish with the carrots, onions, dill and oil.
- Stir the tomato paste and turmeric in the water. Add to the beans. Season to taste.
