I’ve been going asparagus crazy lately, have you noticed? I’ve also recently jumped on the quinoa bandwagon so here’s a recipe you can try that uses the whole asparagus stalk. You just need to break off the tough 1 inch bottom.
Asparagus Quinoa
Ingredients
serves 2
- 1 cup quinoa, rinsed
- 1 cup chicken or vegetable stock
- 1 cup water
- 2 cups chopped asparagus
- salt & pepper
- 1/4 cup grated parmezan or any other sharp cheese
- 1 Tbsp butter
- Melt butter in a large skillet or saucepan. Add the asparagus and cook for 3-5 minutes.
- Add the stock, water and quinoa. Stir, cover and cook on medium low heat for 10-15 minutes or until quinoa is cooked.
- Season to taste and serve topped with the grated cheese.
