Hey there! Another asparagus recipe for this week’s Recipe Monday!
Asparagus & Mash
Ingredients
serves 2 (or a very hungry 1!)
- 1-2 cups prepped fresh asparagus (see step 1)
- 3 large potatoes
- 1/4 cup milk
- 2-3 Tbsp butter
- 1/2 cup cheese (mozzarella, Parmesan or any other cheese you like!)
- salt & pepper
- Snap the tops off the asparagus. Discard the ends.
- Steam or blanch the asparagus tops for 3-5 minutes.
- Boil some water in a large pot.
- Peel and cut the potatoes into small cubes and add to the boiling water in the pot.
- Boil for 15-20 minutes or until the potatoes are cooked through and soft.
- Transfer the potatoes to a bowl, add the butter, milk and cheese. Season with salt & pepper to taste.
- Serve with a boiled egg if you like!
