Hey Friends! I’m back this week with yet another Greek Mommy dish: Artichoke Stew or Artichokes á la polita!
Artichoke Stew
Ingredients:
- 7-8 Artichokes (you can use fresh, canned or frozen!)
- 2 Carrots, roughly cut
- 3 Potatoes, quartered
- 2 Cups Stock or Water
- 1 small Onion, diced
- 1 Tbsp Fresh Dill
- 3 Tbsp Olive oil
- Juice of 1 Lemon
- Salt & Pepper
- 1 Tbsp Corn Flour (optional)
- If using fresh artichokes: Cut off tops and stems and leave in a water bath with some lemon juice squeezed into it for a few minutes.
- Steam artichokes as pictured for about 10 minutes.
- Remove from heat and clean. Remove the leaves by peeling them off,
- And the hairy choke on the inside with a spoon.
- Set aside artichoke hearts.
- In a pan, stir fry the onion in the olive oil. Add the carrots, potatoes and dill and stir fry for a couple minutes. Season with salt and pepper. If you’re using frozen artichoke hearts add them to the pot at this point, straight from the freezer no need to thaw!
- Add stock, cover and reduce heat and cook for 20 minutes or until the carrots and potatoes are cooked.
- Remove from heat.
- Optional:Take a ladle full of the sauce and add the corn flour while whisking. Add back into the pot.
- Add Artichoke hearts and lemon juice and gently shake the pot to mix everything together.
