Hey Friends! I’m back this week with yet another Greek Mommy dish: Artichoke Stew or Artichokes á la polita!

 Artichoke Stew

Ingredients:

  • 7-8 Artichokes (you can use fresh, canned or frozen!)
  • 2 Carrots, roughly cut
  • 3 Potatoes, quartered
  • 2 Cups Stock or Water
  • 1 small Onion, diced
  • 1 Tbsp Fresh Dill
  • 3 Tbsp Olive oil
  • Juice of 1 Lemon
  • Salt & Pepper
  • 1 Tbsp Corn Flour (optional)

  1. If using fresh artichokes: Cut off tops and stems and leave in a water bath with some lemon juice squeezed into it for a few minutes.
  2. Steam artichokes as pictured for about 10 minutes.
  3. Remove from heat and clean. Remove the leaves by peeling them off,
  4. And the hairy choke on the inside with a spoon.
  5. Set aside artichoke hearts.
  6. In a pan, stir fry the onion in the olive oil. Add the carrots, potatoes and dill and stir fry for a couple minutes. Season with salt and pepper. If you’re using frozen artichoke hearts add them to the pot at this point, straight from the freezer no need to thaw!
  7. Add stock, cover and reduce heat and cook for 20 minutes or until the carrots and potatoes are cooked.
  8. Remove from heat.
  9. Optional:Take a ladle full of the sauce and add the corn flour while whisking. Add back into the pot.
  10. Add Artichoke hearts and lemon juice and gently shake the pot to mix everything together.
  11. Enjoy!!
